The Story of Anhydrous Winery

It all began in the early 2000s. Avantis Estate’s winemaker, Mr. Apostolos Mountrichas, discovered a profound connection with Santorini and the strong personality of Assyrtiko, a native grape variety renowned for its unique characteristics. Driven by this passion, he embarked on his Santorini project in 2012.

In 2021, after nearly a decade of dedication and innovation, Mr. Mountrichas founded Anhydrous Winery. His winemaking philosophy is deeply rooted in experimenting with ancient techniques to produce modern wines that exhibit purity and primary varietal characteristics.

Anhydrous wines are a testament to the unique terroir of Santorini, reflecting the island’s anhydrous (dry) land, the majesty of its earth, the volcanic soil, the intense sun, the cooling sea breeze, and the Cycladic air. These elements combine to create wines with a distinctive and intense personality, capturing the essence of this unique PDO (Protected Designation of Origin) region.

Anhydrous Winery prides itself on producing high-quality wines sealed with the raw beauty of Santorini. These are the Anhydrous wines, a harmonious blend of tradition, innovation, and the island’s natural splendor.

Located just a 10-minute walk from the heart of Fira, the Anhydrous Cellar Door invites you to embark on a sensory journey. From April to October, we offer guided tours, wine tastings, delightful lunches in our restaurant, and immersive cooking lessons.

Nestled in the charming village of Kontochori, Anhydrous Winery is dedicated exclusively to the art of wine production. This serene location captures the essence of Santorini’s unique terroir, crafting wines that are a true reflection of the island’s character.

AVANTIS SANTORINI OINOPOIEIO
SOIL

Sandy composition – a mixture of terrestrial  land, lava and pumice, of volcanic composition. It  has  an age of 3600 years.

CLIMATE

Mediterranean with strong summer Aegean winds, the Meltemia. Low rainfall. The vines are ‘irrigated’ by the atmospheric humidity of caldera’s sea mists.

VARIETIES

Τhe Assyrtiko produces volcanic wines with high acidity, purity, minerality, with rich character and long ageing potential. Other indigenous grapes are Athiri, Aidani, Mandilaria and Mavrotragano.

A multi purposed venue dedicated to wine. Guided tours, an innovative,  interactive wine tasting, the food & wine pairing,  the lunch in the restaurant  – just 10’ walk from Fira’s centre.
